East Indian ShrimpHow to Make East Indian Shrimp With Ripe Mango

2 tbsp Coconut oil

1 small red onion thinly sliced

10 fresh curry leaves

5 cloves garlic finely chopped

1lb large shrimp,peeled, devined

2 tbsp East Indian masala

1 large ripe ,firm mango,peeled and cut into long match stick -thin strips

1 1/2 tsp coarse kosher or sea salt

  Method : 1. Heat the oil in a large skillet over medium heat. Add the onion, curry leaves,and garli ,then cook slowly, stirring occasionally,until the onion is soft and honey brown with a deep purple hue.15 minutes.   2. Raise the heat to medium-high,and add the shrimp and masala. Cook, stirring,to coat the shellfish with the spice blend 3 minutes.   3. Pour in 1/2 cup water and scrape the bottom of the skillet deglaze it, releasing the browned bits of onion and spice. continue about 3 minutes until shrimp become salmon orange color.   4. Stir in the mango and salt and let curry simmer, uncovered, stirring occasionally, to warm the mango strips, 1 to 2 minutes, then serve.
