Mint and Cucumber Raita ½ cup (25g) mint leaves ½ cup (25g) coriander leaves (cilantro) 1 baby cucumber, diced 2 teaspoons grated ginger 1 teaspoon minced green chillies 1 cup (250g) yogurt ¼ teaspoon salt ¼ teaspoon freshly ground black pepper
Mince the mint and coriander leaves and combine with the cucumber, ginger and green chillies. Whisk the yogurt in a bowl, add the mint mixture, salt and pepper and mix well. Serve as an accompaniment to any Indian meal.
