Dhal Pudding

Dhal PuddingHow to Make Dal Pudding

1 cup channa dal or yellow split peas

1/2 cup coconut slices

3 tbsp ghee

3/4 cup broken cashew

1 cup brown sugar

3 tbsp quick-cooking tapioca

1/2 tsp cup coconut milk

1/2 tsp ground cardamom

1/2 tsp ground ginger

1/2 tsp ground cumin

Method:

1. In a large bowl wash the dal in several changes of water and drain .In a saucepan bring the dal and

3 cups water to boil. Partially cover and simmer over low heat for 35 minutes . Remove  from the heat

and mash the dal until only a few whole pieces remain. Set aside

 

2. Fry the coconut slices in a tbsp of the ghee until golden brown. Remove the coconut and set aside.

In the same pan ,fry the cashews until golden,set aside

 

3. Return the cooked dal medium heat. Add the remaining ghee ,the brown sugar ,tapoica ,1/4 cup

coconut milk ,and same amount of water. Bring to a boil . Reduce the heat to  medium and cook 15 -20

minutes ,stirring constantly until it’s the consistency of thick pea soup.

 

4. Add the remaining coconut milk, the cardamom.ginger.cumin, and fried coconut slices and nuts. Bring

just to a boil and remove from the heat . Serve warm
