Cheese Balls in Syrup 

(Make 12 to 16 Balls)

 

2 cups panir (fresh cheese)

1 ½ cups ricotta

7 cups water

1 ½ cups sugar

3 to 4 drops rose water (optional)

 

Place the panir and ricotta in a bowl.  Stir until smooth and creamy.  Using your hands, shape the cheese into balls the size of a golf ball.  Place on a plate and cover with plastic wrap.  Set aside.

 

Place the water, sugar and rose water in a saucepan.  Bring to a boil.  Reduce the heat to medium.  Cook for 5 to 6 minutes.  Gently lower the cheese balls into the syrup, using a spoon.  Cook over medium heat for 35 minutes.  Cover.  Reduce the heat to low.  Cook for 30 minutes.  Remove from heat and let cool.  Serve in dessert bowls, topped with a little syrup
