Cabbage With Scrambled Eggs

 

2 tablespoons corn oil

4 to 6 curry leaves (optional)

1 teaspoon black mustard seeds

1 teaspoon urad dal

4 cups coarsely shredded cabbage

1 green chili pepper, chopped (optional)

1/2 teaspoon turmeric powder

1 teaspoon slat

1 teaspoon chutney powder

2 eggs

3/4 cup onion, cut lengthwise

 

In a skillet, heat oil over medium heat until hot, but not smoking.  Add curry leaves, mustard seeds, and urad dal.  Fry, covered, until mustard seeds burst listen for popping sound) and urad dal is golden (about 30 seconds).

Add cabbage, green chili and turmeric powder.  Mix well.  Continue cooking, covered, over low heat for 1 to 2 minutes, stirring frequently. 

Add salt and chutney powder.  Stir well.  Do not overcook cabbage.  Whip eggs and pour over cabbage.  Scramble until eggs are cooked with cabbage.  Add the onion to cabbage and stir well.
