1 Kg boneless lamb ½ tsp elachi (cardamom) ¼ tsp powdered cloves 1 tbsp khus-khus (poppy seeds) 2 tbsp oil Salt to taste 1 tbsp ginger/garlic ½ tsp black crushed pepper ¼ tsp powdered cinnamon 1 tbsp ground cashew nuts 2 tsp fresh ground chillies (red) Wash and cube meat in squares (40 pieces). Wet sesame seeds with little water, then pound till seeds are milky. To this add all other ingredients and marinate meat in them for 10 hours. Arrange on skewers and grill over red hot coals or rotisserie. May also be roasted. Serve hot with lemon and chutney.
