Curried Peas and Cheese
2 tbsp oil
1 can (28 oz/ 796 mL) tomatoes, including juice, chopped
1 ¼ tsp salt or to taste
¾ tsp turmeric\1/2 tsp freshly ground black pepper
1/3 cup cilantro, chopped
2 packages (each 10oz/300 g ) frozen peas
1 recipe Lower-Fat Panir, cut into 1/2 – inch (1 cm) cubes
In a saucepan, heat oil over medium heat. Add tomatoes with juice, salt, turmeric, pepper and cilantro. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 5 minutes.
Add peas and panir. Increase heat to medium and return to a boil. Reduce heat to maintain a gentle boil. Cover and cook, stirring occasionally, until gravy is slightly thicker, 12 to 15 minutes. Serve with rice or any Indian bread.
