Cracked Wheat Uppuma Recipe
2 tablespoons corn oil
4 to 6 curry leaves
1 dried red chilli pepper
1 teaspoon black mustard seeds
2 teaspoons urad dal
1 cup cracked wheat
1 teaspoon salt
1 green chilli, chopped ( opiotnal)
¼ cup shredded carrots
¼ cup freshly ground coconut or unsweetened powdered coconut
Place corn oil in a skillet over medium heat. When oil is hot, but not smoking, add curry leaves, red chilli pepper, mustard seeds, and urad dal. Wait for mustard seeds to pop and urad to turn golden.
Add cracked wheat and roast, uncovered, over medium heat for a few minutes. Add salt and 4 cups of warm water. Blend carefully with ingredients in the skillet.
Add green chilli and carrots. Stir and cook briefly over low heat, covered, until water evaporates. Stir in coconut and mix well. Serve warm.
