225g/8oz fresh cod roe
2 tbsps cooking oil
1 onion, finely chopped
1 fresh green chilli, finely chopped
2 tbsps ground coriander
½ tsp ground turmeric
½ tsp salt
Chop the cod roe roughly. Heat the oil in a non-stick or cast iron pan over a medium heat and fry the onion and green chilli until the onion is soft but not brown.
Add the coriander and turmeric, stir, and cook for 1 minute, then add the cod roe and salt. Cook for 3-4 minutes, breaking up the pieces of roe with a spoon.
Reduce the heat to low and cook until the roe begins to brown, stirring occasionally. Remove from the heat and serve.
