1 tbsp olive oil or vegetable oil
1 tsp mustard seeds
3 1/2 cups freshly cokked white basmathi rice
1/4 tsp brown or black mustard seeds
6 whole unsalted cashews
7 curry leaves
2 medium dried red chilli
1tsp skinened split black lentils or urad dal
1/4 cup freshly grated or shredded coconut
salt to taste
pinch of asafetida
few sprigs of cilantro,roughly chopped
1. In a large sauce pan heat the oil ,add mustard seeds, Asafetida,cashews,curry leaves
chilli,black lentils and salt.stir over a medium heat for a minute.
2. Add the coconut and fry for one more minute.
3. Add the cooked rice and gently mix and heat through
4. Sprinkle with cilantro.
