4  Boneless and skinless chicken breast cut in to bite size

4  Green chilli slit lengthways

1 tsp ground white pepper

6  Spring onions,  sliced

1 1/2  tbsp dark soy sauce

1  tsp hot chilli powder

1 1/2  tbsp corn starch

2  tsp ginger finely chopped

2  tbsp malt vinegar

2  tbsp tomato puree

2  tsp  sugar

4  tbsp vegetable oil

2  medium  Spanish onion finely chopped

Salt to taste



1. Mix together the soy sauce, chilli powder, salt , cornstarch ,ginger , garlic , vinegar , tomato puree

and sugar

2. Heat  2 tbsp oil in a heavy based pan  and fry onions about 5 minutes until soft and translucent

and remove  from the heat

3. Mix the fried onions with soy sauce paste, add the chicken and stir to coat , cover and leave to

marinate for half an hour in the refrigerator.

4. Heat the pan with remaining oil  add the green chilli and white pepper and fry over a low hea

for a minute

5. Add marinate chicken with the marinate sauce and fry for 10 minutes until chicken is cooked

6. Garnish with spring onions
