Chickpea Flour Balls
¾ cup ghee
2 cups chickpea flour (besan), sifted
1 cup confectioner’s (icing) sugar, sifted
1 tbsp ground cardamom
2 tbsp raisins
In a wok, melt ghee over medium heat. Add chickpea flour all at once andmix well. Reduce heat to medium-low. Cook, stirring continuously, until well browned and aromatic, about 15 minutes.
Remove from heat and add sugar, cardamom and raisins. Mix well. Let cool for 15 minutes.
Spoon by heaping tablespoonfuls |(15mL) onto baking sheet, at least 2 ½ inches (6 cm) apart. Mixture will spread slightly. Let rest for 15 minutes until firm. Roll into balls. If mixture is not firm enough to hold its shape, repeat process after 15 minutes. Do not refrigerate to harden. Balls will hold their shape as they rest.
