Chicken Meat with Double Beans
250g chicken meat (cut in small pieces) 500g shelled and peeled double beans 1 tsp ginger/garlic ½ tsp turmeric 1 tsp salt 1 tsp red chilli ¼ cup oil 2 fresh chillies(red or green) 1 onion 2 tomatoes ¾ tsp dhunia/jeera powder 1 tblsp chopped dhunia Shell beans soak in cold water and takeoff filament. Slice onion. Slit fresh chillies. Braise onion in oil and before they change colour, add chicken pieces and spices and cook slowly till moisture evaporated. Add tomato and cook till blended in meat. Add peeled double beans, and allow to cook very gently in moisture of tomatoes. It is not necessary to add water a but a tblsp or tow may be added. 5 Minutes before serving, add slit chillies. Serve garnished with green dhunia. Note: To cook double beans for vegetarian omit meat. Onions must only be sautéed and spices decreased slightly.
