5 black peppercorns

5 cloves

2 star anise

1 1/2 tsp fennel seeds

4 dried chili,stalk removes

4 green cardamoms

1/2 tsp poppy seeds

1 -inch cinnamon sticks

1/2 tsp salt

1/2 tsp turmeric

1 tsp cumin

1/4 tsp ground coriander

3 tbsp groundnut oil

1 1/2 medium white onion ,finely chopped

14 oz boneless chicken thighs and drumsticks

7/8 cup coconut milk

1/2 tsp tamarind concentrate



1 . Heat a frying pan and add the peppercorns,cloves, anise,fennel seeds,red chili, cardamoms,

poppy seeds and cinnamon and roast for a minute


2 . Put the roasted spices in a coffee mill with the salt,turmeric ,cumin , and coriander and grid to a

coarse powder


3 . Alternatively use a pestle and mortar


4 . Heat the oil in a pan and fry the onion and garlic for 3 minutes


5 . Add the chicken pieces and saute for 9-10 minutes, browning them all over


6 . Add the ground mixture and stir fry for a minute


7 . Add 3/8 cup boiling water ,then add to the chicken and simmer for another  5-6 minutes

8 . Stir in the tamarind and cook for another  6-7 minutes ,until it reaches the consistency of runny

gravy and the chicken is cooked through.


9 . Sprinkle with grated coconut and serve
