2 tbsps desiccated coconut
30g/1oz finely shredded onion
1 tbsp lemon juice
2 tbsps freshly chopped coriander leaves
1 fresh green chilli, seeded and roughly chopped (optional)
½ tsp salt
Peel and grate the carrots, then combine all the ingredients except the salt in a bowl. Stir in the salt just before serving.
